Crispy Kale & Baked Sweet Potato Chips
Baked Sweet Potato Chips
- Wash and scrub your sweet potatoes
- Chop your sweet potatoes into ⅛ inch slices with a chopping knife
- Lightly oil your sweet potatoes by mixing them in a bowl with ½ tablespoon of olive oil
- Place your sweet potatoes on a baking sheet lined with parchment paper
- Bake the sweet potatoes at 350 for 15 minutes, then flip them onto the other side.
- Bake for an additional 14-17 more minutes (checking 7 minutes in between for the final 14 minutes)
- Note** look for brown edges and a crunchy sound (check the video for what I mean (: )
- Add salt to taste on top & let your chips cool before you dig in!
Crispy Kale
- Wash and dry your kale
- Destem the kale by pulling them off the stem carefully – making sure the clumps are each about the same size
- Lightly oil your kale by massaging them with your hands in a bowl with ½ tablespoon of olive oil
- Place your kale on a baking sheet lined with parchment paper & season with salt
- Bake the sweet potatoes at 350 for 15 minutes, then check on them to see if they need more cook time.
